PREPARATION
COOKIE
Step 1
Put in mixing bowl 110gr melted coconut oil with 220gr coconut sugar and mix

Scrape down the sides with the aid of spatula and mix again

Add in mixing bowl 1 teaspoon vanilla extract and 2 tablespoons coconut milk. Mix

Add in the mixing bowl 190gr wholewheat flour, 15gr corn flour, 1/2 teaspoon baking soda, 1/4 teaspoon salt and mix

Scrape down the sides with the aid of spatula and add in mixing bowl 60gr chocolate chips. Stir weill with the aid of spatula.
Step 6
Pre heat oven to 170 degrees.

Put parchment paper in a round baking pan with diameter 20cm and put inside the mixture. Press firmly so that you create an even surface. Sprinkle on top rest 30gr chocolate chips. Bake in the oven for 17 minutes. The edges will be golden brown. The inside middle will still be slightly gooey, which is how it should be.

Clean and dry the mixing bowl.

While the cookie is baking prepare caramel sauce.
CARAMEL SAUCE
Step 1
Put in the mixing bowl 55gr coconut oil, 50ml maple syrup, 55gr almond butter, 1 teaspoon vanilla extract and 1/4 teaspoon salt. Mix

While you wait for the cookie to be made put the caramel sauce in the fridge so that it thickens a bit and not have such a liquid consistency.
Step 3
As soon as the cookie is ready remove from the oven and pour on top the caramel sauce. Serve immediately.
TIPS

1. Its wonderful with a scoop of vegan vanilla ice cream or your favorite flavor on the side!
2. After you use it for the first time you can put the caramel sauce in the fridge. It thickens while its in the fridge though. You can store it there and warm it up a little to have the consistency you like just before you serve it.
