APPLE CRUMPLE WITH DATE CARAMEL

PREPARATION
TOPPING
Step 1
Put in the mixing bowl 50gr walnuts and crush for half a second. Then put them in a big bowl and leave aside.

Put in the mixing bowl 1 ripe banana and mix

Add in mixing bowl 1 teaspoon cinnamon, 10gr melted coconut oil, 45gr maple syrup and mix

Add in the mixing bowl 100gr oat flakes, 100gr wholewheat flour, 1/4 teaspoon salt and mix

Step 5
Stir with the aid of spatula and put the mixture in the bowl where you have put crushed walnuts. This is the crumble. Leave aside
FILLING
Step 1
Put in mixing bowl 100gr medjool dates, 125gr hot water, 1/2 teaspoon salt and mix

Scrape down sides with the aid of spatula and mix again. You have created a date caramel.

Put the date caramel in a small bowl and leave aside.
Step 4
Put in mixing bowl 700gr apples cut in thin slices, 20gr maple syrup and stir with the spatula so that the maple goes everywhere. Then add 10gr water and 1 teaspoon cinnamon. Cook without the measuring cup.

ASSEMPLY
Step 1
Pre heat oven to 170 degrees.
Step 2
Add the apple mixture in a baking pan 30X25cm (approximately). Then add on top the date caramel mixture and stir with the spatula so that the caramel goes all over the pan.
Step 3
Then, with your hands sprinkle over the crumble which you left aside.
Step 4
Bake in the oven for 25 minutes or until the crumble is crispy and golden. In the meantime start making the vegan custard.
VEGAN CUSTARD
Step 1
Put in the mixing bowl 250gr coconut milk, 25gr maple syrup and 1/2 teaspoon vanilla extract and cook

Put in a small bowl 25gr corn flour with 2 tablespoons cold water and stir well until the corn flour is fully dissolved.

Then add the corn flour mixture in the mixing bowl and cook

When the apple crumble is ready pour the custard over the apple crumble and serve immediately while its still warm.
TIPS

This dish is excellent while its warm. If you want to enjoy it later then its good to warm it again in low temperature.
