PREPARATION

Put in the mixing bowl 130gr pitted dates and crash

Put dates in a bowl and leave aside.

Put in the mixing bowl 310gr pumpkin puree, 1 teaspoon vanilla extract, 1 teaspoon apple cider vinegar, 65gr almond milk, 55gr melted coconut oil and mix.

Add in the mixing bowl 165gr oat flour, 1/2 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon cinnamon, 1 teaspoon pumpkin pie spice, a pinch of salt and dates you left aside.

Scrape down the sides using the aid of spatula and mix again.

Add in the mixing bowl 60gr chocolate chips and stir with the spatula.

Pre heat oven to 180 degrees and put muffin liners in a muffin tin.

Add the mixture in the muffin liners. Bake in the oven on 180 degrees and bake for 7 minutes and without opening the ovens door lower the temperature on 170 degrees and bake for another 10 minutes,

Let the muffins cool down and store in an airtight container.
TIPS

If the dates you have are not soft, put them in hot water for 15 minutes before starting the recipe. Then drain the water and use them.

VARIATIONS

1. Instead of dates you can use 110gr brown sugar or coconut sugar.
2. If you dont have pumpkin pie spice you can make your own, Put in a bowl 3 tablespoons cinnamon, 2 teaspoons ground ginger, 2 teaspoons nutmeg, 1 teaspoon all spice, 1 teaspoon ground cloves. Mix with the spoon and store in an airtight container.
3. You can make easily pumpkin puree. Put pumpkin pieces in the oven and bake for 180 degrees for half an hour. It has to be tender and soft. Then put pumpkin in the mixing bowl and mix until you create a puree. Let it cool down and then use it in the recipe.
