Almond tarts with raspberry filling
Βήμα 1
Preheat oven to 170°C.

Place 140 g blached almonds and 150 g sugar into mixing bowl and grind 20 sec/speed 10.

Add 260 g all purpose, 175 g unsalted butter, 1/2 tsp baking powder, 1/2 tsp salt, 1 tsp homemade vanilla sugar and 1/2-1 tsp almond essence and mix 10 sec/speed 5. Transfer into a bowl.

Set 1 minute/Dough, with the aid of the spatula. Transfer into a bowl and shape lightly.

Take approximately 20 g and shape into small balls. Place each ball into a paper tart mold and press the centre with your thumb to make a small hole. Fill in each tart's hole with some raspberry jam and garish with flaked almonds.

Transfer into a baking tray and bake for 15 minutes (170°C). Transfer onto a wire and set aside to cool.

Garnish with icing sugar and serve.
